The Derby Darling is, to my knowledge, one of those honorifics that has now disappeared. Perhaps we'll learn more as the book continues, but perhaps this is somehow tied to a horse race.

More probably this is a nod to the Sigma Chi fraternity's event called Derby Days, which is a big fundraiser for the Children's Miracle Network.

Derby Days continues today, but I believe there's no longer a beauty/popularity contest involved.
